1. Prepare the Liquid Base
Mix granulated sugar, salt, egg, and milk in a bowl. Stir until the sugar dissolves, then set aside.
2. Combine Flour and Yeast
In a mixing bowl, add bread flour and instant yeast. Using the Sharp Stand Mixer EMS-62 with the dough hook, mix on low speed.
3. Add Liquid Base
Gradually pour in the liquid mixture while increasing the mixer to its highest speed. Continue mixing until well combined.
4. Incorporate Butter
Add the butter and knead for approximately 15 minutes until the dough becomes smooth and no longer sticky.
5. Roll and Shape Dough
Knead the dough by hand to release any air bubbles. Roll it out into a rectangular sheet measuring 10×14 inches.
6. Prepare Pastry Margarine
Roll the margarine into a 6×4-inch rectangle about 1 cm thick. Place it on the dough and fold the dough over to completely enclose the margarine. Seal the edges well.
7. Fold and Roll
Roll the dough into a 10×14-inch sheet. Gently press with a rolling pin to flatten.
Fold the dough into three layers (first fold). Repeat the process twice more (a total of three folds), rolling into a 10×14-inch sheet after each fold.
8. Chill the Dough
After the final fold, wrap the dough in plastic wrap and refrigerate for about 1 hour.
9. Shape into Hearts:
Roll the dough into a 10×14-inch sheet. Use a heart-shaped cookie cutter to cut out the dough. Allow the dough to proof until it doubles in size, approximately 1 hour.
10. Bake the Pastries
Brush the tops of the pastries with the egg yolk and milk mixture. Place them on a tray and bake in the Sharp EO-28LP oven at 190°C using both upper and lower heat for 30–35 minutes. Let cool.
11. Decorate and Serve
Drizzle melted chocolate over the pastries and sprinkle sugar beads for a festive touch. Serve and enjoy!
