Ingredient : Stir-Fried Rice Noodles with XO Sauce (Pad Ngor-Ngaeng)
Wide rice noodles (Sen Yai): 200g
Chinese sausage (Gun Chiang): 50g (diced & fried)
Dried shrimp: 20g (soaked & fried)
Firm tofu (yellow tofu): 50g (diced & fried)
Eggs: 2
Vegetable oil: 3 tbsp
Fermented soybean paste (Tao Jiew): 1 tbsp
XO sauce: 1 tbsp
Oyster sauce: 1 tbsp
Sugar: 2 tsp
Fried garlic & chopped green onions (for garnish)

How to : Stir-Fried Rice Noodles with XO Sauce (Pad Ngor-Ngaeng)
1. Heat the Pan
Add vegetable oil to a pan on the Sharp Induction Cooker CY-301.
Press ON, then select HOT POT mode at 2000W.
2. Cook the Eggs & Noodles
Crack the eggs into the pan and scramble lightly to keep soft curds.
Add the wide rice noodles and stir-fry until they become fragrant.
Stir in fermented soybean paste, XO sauce, oyster sauce, and sugar.
Add the fried Chinese sausage, dried shrimp, and tofu, then toss everything together.
3. Serve & Garnish
Plate the noodles and sprinkle with fried garlic and chopped green onions.
